Mac & No Cheese

Ingredients
1 Cup Butternut Squash, cooked and mashed1/2 1 Cup Raw Cashews 1/2 Cup Soy Milk 2 Tablespoon Cornstarch 4 Tablespoon Nutritional Yeast 2 Teaspoon Dijon Mustard 3/4 Teaspoon Garlic Powder 1/2 Tablespoon Lemon Juice 1/2 Teaspoon Sea Salt1/4 Teaspoon Black Pepper 12 Ounce Macaroni Noodles, Brown Rice or Whole Wheat 1 Cup Peas |
Directions
Place all (other than noodles and peas) of the ingredients in a vitamix or high powered blender. Blend until smooth and creamy. Preheat oven to 350 degrees. Whisk the creamy mixture in a saucepan over medium heat until thickened. Cook the pasta noodles. Combine the pasta noodles, sauce, and peas. Place in a casserole pan and put tasty spices on it. Bake uncovered for 20-30 minutes or until golden brown and bubbly.. Hint: You can add other vegetables such as spinach or broccoli. Try adding Mexican seasonings to the sauce and green chilis with red kidney beans to the macaroni. Now you have a chili mac style dish. |
