African Peanut Soup
Ingredients
1 onion, chopped 1 green bell pepper, diced small 1 red bell pepper, diced small 2 cloves of garlic, minced 28-oz. can stewed tomatoes, pureed 4 cups vegatable stock 1/8 tsp. hot pepper flakes, or to taste 1 Tbsp. curry poweder 1/2 cup uncooked brown rice 1/4 cup natural peanut butter A bit of salt and pepper |
Directions
1. Heat up a large pot, add onions, peppers and garlic. Saute until onion begins to brown. Throw in a bit of water if needed (since we don't use oil). 2. Add tomatoes, stock, hot pepper flakes, and curry powder if you wish. Simmer uncovered over medium heat for 30 minutes. 3. Add rice and peanut butter. Cook, covered, for 20 minutes or until rice is done. 4. Add any other spices you think might be tasty |
